Remove from grill when pork reaches and internal temp of 145 degrees. Place on grill and grill 6-8 minutes on each side. Sprinkle pork chops with rub and massage into meat on both sides. Let the pork chops rest in the sauce for 3-5 minutes after you take them out of the oven. Mix rub ingredients together in small bowl. I use a probe thermometer like this one, so I can monitor the temperature of the meat as it cooks. This is where I put in my meat thermometer. Then arrange four center cut, bone-in pork chops in the dish, on top of the sauce layer. You don’t need a lot, just something for the pork chops to sit on. ![]() Once the sauce is hot and bubbly (it just takes a few minutes), pour a layer of sauce in the bottom of a baking dish. (This would be a great place to use some frozen chicken broth, if you have some handy.) Darn.) You just want all the ingredients to get combined (it takes a bit of stirring to get the ketchup and brown sugar mixed in). Turn the heat on to medium, and stir it up. Brush on some of your favorite barbecue sauce and return to the oven for 10 minutes. Place chops into the oven and bake for 20 minutes.
